Non pareille capers are the smallest, most delicate, and most prized variety of caper, meaning “without equal” in French. They measure under 7mm and have an intense, salty, and slightly piquant flavor. These capers are harvested earlier than larger varieties and in brine. They are used to add a sharp flavour to a wide range of dishes, such as fish, salads, pasta sauces, and tartar sauce.
