This weeks fish of the week – Smoked Salmon from Severn & Wye Smokery, situated on the river Severn, on the edge of the Royal Forest of Dean. The production techniques and smoking processes are still very traditional and the grading, filleting, curing and cutting are still mostly done by hand.
