This week’s Boxes – The Vegetables

This week our boxes include everything you need to make a perfect autumn soup, roasted butternut squash and chilli. 

This squash is often know as winter squash, even though it is grown in the summer and harvested in the Autumn, but because of its unique hard skin they store so well and traditionally eaten throughout the winter months. They are a great source of fibre as well as  including A, C, E and B vitamins along with minerals such as calcium, magnesium, and zinc. Three tablespoons of cooked butternut squash counts as one of your five-a-day.

We also have portobello mushrooms this week. These are Chestnut mushrooms which are allowed to grow to a larger size. These large and robust mushrooms have a firm texture, tender and earthy flavour with smooth creamy flesh, Ideal for stuffing, baking or grilling. 

Chantenay carrots are now in season. We love them roasted just tossed whole in olive oil, sea salt and black pepper and herbs or spices to taste. Try cumin or chopped thyme and experiment to create your own favourites. Arrange the carrots in a single layer in a roasting tin and place in the oven at 190c 375f for 20-30 minutes or until the carrots are tender, slightly browned and caramelised.
