This week we have a new recipe for you, Spring roast vegetable salad with beetroot. This delicious recipe is so easy to make and the results are delicious. It can be eaten straight away or stored in the fridge, perfect for packed lunches. We have included all the fresh ingredients and chickpeas in our £25 and £15 boxes, you will just need to add gherkins.
Our cheese of the week Feta works perfectly with this recipe, you can crumble fresh feta over the roasted vegetables or make whipped feta. Whip feta with 1/2 cup Greek yoghurt, lemon zest to taste and a splash of olive oil, whip to a smooth consistency and serve sprinkled with toasted seeds and a drizzle of olive oil.

We have included a real heritage salad ingredient to your boxes – cress, which is a general term for the first leaves of plants from the cabbage and mustard family – usually with a strong or peppery taste. A true British ingredient of an egg sandwich.
Cress microgreens are highly nutritious, fast-growing greens packed with vitamins C, E, K, and A, offering up to 40 times more nutrients than mature counterparts. Although they seem an old fashioned addition to your salad, they are the original micro green, and they really do perk up a sandwich or salad.
