Arborio rice is a short to medium grain Italian rice, , named after Arborio in the Po Valley, known for its high starch (amylopectin) content, which creates a creamy, chewy texture when cooked, making it ideal for risotto, arancini, and rice pudding. Its plump, pearly grains absorb lots of liquid while maintaining a firm “bite,” releasing starch to naturally thicken dishes.
