This filling is made following a recipe claimed from both the Southern regions of Campania and Sicily. It is made by slowing roasting Aubergine in the oven with some garlic and Tomato sauce. It is then mixed with Italian Fresh Mozzarella. A delicious filling that matches well a Red Pepper and Cherry Tomato Sauce. Suitable for Vegetarian. Suitable for freezing
