A good stout cheddar with a characteristic savoury tang. The cheese retains the sweetness of the local pasture milk, but has a firmer body than younger equivalent cheddars. This is a naturally rinded product and the colour of the rind may have seasonal variations. It may contain naturally occuring blue veins which are normal and typical of this type of cheese
This award-winning Cave Matured Cheddar has been matured within Cheddar Gorge’s natural caves. The influence of the cave environment has been remarkable in terms of texture and taste – this natural cave matured cheddar is smooth and well rounded. It has a soft but complex, rounded flavour.
