These special Puy lentils come from the region of Le Puy-en-Velay, in the South of France.  This area was formed from ancient volcanic lava domes, which make the land incredibly fertile. This, combined with the high altitude and dry climate contribute to the lentils’ low moisture content, helping them retain their shape when cooked. Nutty and peppery in flavour, prized by chefs especially in French and Mediterranean dishes, high in protein, fibre and iron.
