Samphire is a salty succulent that grows along the shoreline.  It is high in Vitamin A and a good source of calcium and iron.

It can be lightly sautéed in butter or steamed to be served with fish. Delicious in salads, even a garnish for gin and tonic.

We love it fresh and crisp on a slice of good bread sandwich with hardboiled egg and mayonnaise.
