Crown Prince Squash with Pearl Coucous

Instead of the usual butternut squash, we’re using a very special Crown Prince squash. This variety has a rich, nutty flavour and wonderfully dense, vibrant orange flesh that makes the dish even more comforting. It’s one of our favourites to cook with at this time of year — a little bit different, a lot more special.
